~Delicious Yellow Cake (I won 1st in a best taste award with this one!)
Tortilla:
4 cups white flour
2 teaspoons salt
2 teaspoons baking powder
4 tablespoons shortening
approximately 1 1/2 cups warm water
1. Combine dry
ingredients, and cut in shortening.
2. Add water a little at a time, make into dough.
3. Knead dough until smooth, cover for ten minutes.
4. Roll into balls, the size of an egg, and then roll out with a rolling pin.
5. Heat a skillet on medium heat; cook for a minute each side.

Taco
Casserole:
Preheat oven to 375 degrees.
Gather:
Beef
Shredded Cheese
Rice
Doritos Chips
taco seasoning
salsa
sour cream
Ground the beef
and add the seasoning.
Cook the rice and crush the Doritos.
Layer in a casserole: beef, rice, crushed Doritos, cheese.
Heat until the cheese melts and it is hot through.
Serve with salsa and sour cream (optional).

Preheat oven to 350°F. Lightly grease a 9x5x2-inch loaf pan; set aside.
COMBINE IN A
MIXING BOWL AND SET ASIDE:
2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
IN ANOTHER BOWL,
WHISK TOGETHER:
4 ripe bananas, mashed
2 eggs
1/3 cup vegetable oil
1 teaspoon vanilla
GRADUALLY ADD DRY INGREDIENTS, STIR JUST ENOUGH TO COMBINE.
POUR INTO LOAF PAN.
BAKE 45 to 50 minutes (or until a toothpick inserted into center of bread comes out clean.) (If you are making muffins, bake about 20 minutes)
Remove and cool on a wire rack. Wrap in foil to keep moist.

Gumbo:
2 cans Cajun tomatoes (if you can find them, if not Mexican works good)
2 cans diced tomatoes
chicken (boil
and debone and shred)
sausage (cook and slice) (smoked Hillshire farms works good, Cajun is best)
dice onion and green pepper. Sauté.
To taste:
Sazzone (4 packs)
Adobo (lots!)
4 T browned flour (not necessary)
tobasco (a few shakes)
lemon juice (a touch)
Cajun or Creole seasonings (lots!)
Package of French onion soup
some of the broth from boiling the chicken
Add everything to desired thickness and taste. Bring to a boil and then simmer for one hour at least for the best taste.
(What you can do is bring to a boil and then add seasonings, taste, and then add some more if needed. We like it spicy hot - to the point it makes you almost cry! But we make it much milder for company. It's great for church potlucks in the crockpot; just take a rice cooker with rice, too.)
Optional: throw some tiny shrimp on top the last 10 minutes.
Optional also: If you want, you can throw it all in the crockpot without having to cook anything first. It comes out great. You'd just have to shred the meat on your plate.
***As with all recipes, don't worry if you don't have all the ingredients. experiment and make it your own!
Serve over rice.

Creamy Chicken
Casserole:
-8 potatoes
-hamburger meat (chicken works too, if you add more flavor)
-one half of an onion OR onion powder
-1 can cream of chicken
-shredded cheese
-Seasoned salt to taste
Brown hamburger
meat.
Peel and slice potatoes.
Mix together in casserole dish.
Stir in onion; pour cream of chicken over top.
Bake for one hour at 350 degrees.
After baking, spread cheese over top and let melt.
Enchilada:
Preheat the oven to about 375 degrees.

Enchilada:
Ingredients:
Ground Beef (or chicken and/or beans)
tortillas
shredded cheese
several cans of enchilada sauce
toppings of choice:
salsa, lettuce, tomato, sour cream
Brown the ground
beef. You may wish to add taco seasonings or your own.
Stir in 1/2 the enchilada sauce.
Wrap the beef and some cheese in the tortilla "burrito" style.
Layer the 'burritos' in a rectangular pan.
Pour the rest of the enchilada sauce over the enchiladas.
Layer some cheese over the top.
Bake!
When they are done, let everyone dress their own according to taste - with shredded lettuce, diced tomato, sour cream, salsa, maybe black olives.

Ingredients:
2 1/4 cup all purpose flour
1 1/2 cup sugar
1 tbs baking powder
1/2 tsp salt
1/2 cup shortening
1 cup milk
1 tsp vanilla
3 eggs
Combine dry ingredients in big bowl. Add shortening, milk, vanilla, and eggs. Mix on high until smooth.
Pour batter into
two greased and floured 8 or 9 inch round baking pans. Bake at 350 for 30-35
minutes, or until toothpick inserted in center comes out clean.
